Diabetic Cake Recipe

Cinnamon Carrot Cake
Ingredients

- 2 cups unbleached flour
- 1 1/4 cups Splenda sugar substitute for baking
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons ground cinnamon
- 3 egg whites
- 2 teaspoons vanilla extract
- 1 cup raisins
- 2 cups grated carrots
- 1/2 cup water packed crushed pineapple, drained
- 1 cup unsweetened apple sauce
- Cream Cheese Frosting
- 8 ounces nonfat cream cheese
- 1 tablespoon skim milk
- 1 teaspoon vanilla extract
- 3 tablespoons DaVinci Gourmet Vanilla Sugar Free Syrup
- 1 1/2 cups light whipped topping
Directions
Serves: 12
- Preheat oven to 325 degrees Fahrenheit. Place flour, sugar, baking soda and cinnamon in a large bowl. Stir to mix well. Add the applesauce, pineapple, egg whites, carrots, vanilla extract and raisins.
- Coat a 9 by 13 inch glass baking pan with non stick cooking spray. Spread the batter in the pan and bake for 40-45 minutes or until the top springs back when lightly touched or a wooden toothpick inserted in the middle comes out clean. Allow the cake to cool to room temperature.
- Place the cream cheese, milk, vanilla extract and syrup in a medium sized bowl. Beat with electric mixer until smooth. Gently fold in the whipped topping. Spread the frosting over the cooled sake. Serve immediately or refrigerate.
