Grilled Salmon Diabetic Meal Entree

Diabetic meal planning at the DaVinci Gourmet is easy. There are so many entree recipes, vegetable recipes and dessert recipes available that you won't get tired of the same old thing. Simply substitute DaVinci Gourmet sugar free syrups for classic syrups in any of the recipes listed, or base your diabetic meals around one of the specially designed sugar free recipes found on the site. As always, use caution when preparing diabetic meals, and substitute sugar free or low sugar ingredients for traditional ones.

Grilled Salmon

Serves: 4

  1. Mix all marinade ingredients. Arrange salmon, skin side up, in baking dish. Marinate salmon, cover, and chill for 1 hour.
  2. Remove salmon from marinade. Pat salmon dry. Season salmon with salt and pepper and grill, skin side down, on an oiled rack set 5 or six inches over glowing coals, for 4 minutes.
  3. Put lid on grill and grill salmon until cooked through, 3 to 4 minutes more (alternatively, salmon may be grilled in a hot, well-seasoned, ridged grill pan with a lid over moderate heat.)
  4. Carefully, transfer salmon with a metal spatula to a platter and remove skin. Pour reserved juice mixture over salmon.
