Cinnamon Carrot Cake (low-sugar)

Ingredients

  • 3 tablespoons DaVinci Gourmet Vanilla Sugar Free Syrup
  • 1 1/2 cups light whipped topping
  • 1 cup unsweetened applesauce
  • 1/2 cup water packed crushed pineapple, drained
  • 2 cups grated carrots
  • 2 cups unbleached flour
  • 1 1/4 cups sugar
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 3 egg whites
  • 2 teaspoons vanilla extract
  • 1 cup raisins
  • 8 ounces nonfat cream cheese
  • 1 tablespoon skim milk
  • 1 teaspoon vanilla extract

Directions
Cake

  1. Preheat oven to 325°F. Place flour, sugar, baking soda and cinnamon in a large bowl, stir to mix well.
  2. Add the applesauce, pineapple, egg whites, carrots, vanilla extract, and raisins.
  3. Coat a 9 x 13-inch glass baking pan with nonstick cooking spray.
  4. Spread the batter in the pan and bake for 40-45 minutes, or until the top springs back when lightly touched or a wooden toothpick inserted in the middle comes out clean.
  5. Allow the cake to cool to room temperature.
Cream Cheese Frosting
  1. Place the cream cheese, milk, vanilla extract and syrup in a medium sized bowl.
  2. Beat with an electric mixer until smooth.
  3. Gently fold in the whipped topping. Spread the frosting over the cooled cake.
  4. Serve immediately or refrigerate.
